Homemade Mayo!

mayo

I was making lunch for me and the boys today… we decided we wanted to have tuna salad sandwiches. As I was getting out all of the ingredients needed, I realized we were OUT OF MAYO! We really wanted tuna sandwiches.. but without mayo, it wasn’t going to happen :(. So.. I started to brain storm a solution. Going to the store was out of the question (me plus 3 kids running to the store for one ingredient seemed to be way too much work in this disgusting heat).. so I kept brainstorming a solution. Then I realized, we may not HAVE mayo but, we have all the ingredients to MAKE mayo! So, I made homemade mayo! It is super simple and turned out tasting way better than store bought!! Delicious Health-ified Quiche

Ok so, I haven’t been on here in a while… A long while! Life has just been busy! I will give a full update real soon! But for now here is one of my favorite recipies that I made a tad healthier by increasing the veggies, using water (you could do vegetable broth too) instead of milk, decreasing cheese, and making a wheat crust. Enjoy!

Crust:
1 C flour (I used King Arthur brand white whole wheat)
1 tsp salt
1/2 C olive oil
1/4 C cold water

In a medium bowl mix flour and salt. Set aside. Then in a small bowl whisk the oil and water together until completely combined. Pour oil/water mixture into the flour mixture and stir until it forms a ball. Next, press the dough into a 9 inch round pan forming a crust.

Quiche filling:

4 eggs
1/2 C water
1 Tbsp Sour cream or Greek yogurt (optional)
1 tsp lemon pepper
1 tsp garlic powder
2 Tbsp basil
1/2 tsp black pepper
1/2 tsp salt
2 broccoli crowns
3-4 cups of fresh spinach
1/2 C fresh Italian parsley
3/4 C Monterey Jack cheese
1 C Feta cheese

Pre-heat oven to 350.

Combine the eggs, water, sour cream/ yogurt, and spices in a medium bowl. Whisk together, then pour into the pan with the crust.

Next cut up the broccoli into bite sized pieces and mince the parsley. Then sautée the veggies in a splash of olive oil in a medium pan. Add spices according to your taste (I use garlic powder, minced fresh garlic, salt, & pepper). Sautée until the veggies are just a little soft and the spinach is just wilted (I do it for like 5-7 mins). Then pour the veggies into the pan and mix into the egg mixture. Top with cheese. Bake for 35-40 mins or until the top is slightly browned.

It’s Been a While!

Sorry again for the long break! Like always… Life got busy! Anyway, just wanted to post a quick update 🙂 It’s been just about 10 weeks since little Evey made her appearance in this world! She is such a wonderful baby and we are so blessed to have her as a part of our family :). For right now I will just give an update on my weight loss progress but, I am hoping to post some informational posts very soon!
I have been pretty consistent in eating well and working out at least 3 times a week. I have been getting clogged milk ducts quite a bit this time around (I haven’t really ever experienced them before)… It’s not fun! I start feeling achy, and get flu like symptoms all of a sudden! If you are experiencing this just rest as much as possible, drink lots of fluids, feed or pump as often as you can, and for the discomfort to the breast use warm compresses and massage it out! So anytime that happens my work out schedule gets thrown off. Even with those I’d still say I get at the very least 2 hard core workouts and maybe 1 or 2 light workouts (like a 20 min family walk). I am currently down to 127 lbs! Yay! Only 4 more pounds to go to be at my pre-pregnancy weight! And since I am doing Pop Pilates I am noticing more definition showing through! So refreshing to see such great results for my efforts 🙂

Eating right and exercising (and breast feeding helps too!) is the way to go! Hope you are all doing well! Have a great weekend 🙂

6 Weeks Postpartum

Hello! Sorry for that little break there.. life got a little busy for a bit! Anyway, I had my postpartum check-up last thursday. Everything checked out normal, my weight was down to 133 lbs (only 10 lbs from what I was pre-preggo!) and I was given the approval to go ahead with my previous exercise routine! Since I was given the go ahead, that weekend I ran a mile… and it felt AMAZING! So glad to be able to run again. I definitely had to ease into it though, because even-though I had kept up an exercise routine while pregnant and postpartum… it was still hard! Read the rest of this entry »
