Delicious Health-ified Quiche

Ok so, I haven’t been on here in a while… A long while! Life has just been busy! I will give a full update real soon! But for now here is one of my favorite recipies that I made a tad healthier by increasing the veggies, using water (you could do vegetable broth too) instead of milk, decreasing cheese, and making a wheat crust. Enjoy!

Crust:
1 C flour (I used King Arthur brand white whole wheat)
1 tsp salt
1/2 C olive oil
1/4 C cold water

In a medium bowl mix flour and salt. Set aside. Then in a small bowl whisk the oil and water together until completely combined. Pour oil/water mixture into the flour mixture and stir until it forms a ball. Next, press the dough into a 9 inch round pan forming a crust.

Quiche filling:

4 eggs
1/2 C water
1 Tbsp Sour cream or Greek yogurt (optional)
1 tsp lemon pepper
1 tsp garlic powder
2 Tbsp basil
1/2 tsp black pepper
1/2 tsp salt
2 broccoli crowns
3-4 cups of fresh spinach
1/2 C fresh Italian parsley
3/4 C Monterey Jack cheese
1 C Feta cheese

Pre-heat oven to 350.

Combine the eggs, water, sour cream/ yogurt, and spices in a medium bowl. Whisk together, then pour into the pan with the crust.

Next cut up the broccoli into bite sized pieces and mince the parsley. Then sautée the veggies in a splash of olive oil in a medium pan. Add spices according to your taste (I use garlic powder, minced fresh garlic, salt, & pepper). Sautée until the veggies are just a little soft and the spinach is just wilted (I do it for like 5-7 mins). Then pour the veggies into the pan and mix into the egg mixture. Top with cheese. Bake for 35-40 mins or until the top is slightly browned.
