Hulk SMAAAASH Breakfast Muffins

I have two boys who are completely die hard fans of any and every super hero imaginable. So when I came across the idea of making green muffins.. and I called them hulk smash muffins.. my boys were SO IN! These muffins are green but super delicious and nutritious! Basically its a French Muffin recipe that I revamped to add whole grains, less sugar and spirulina (which is what makes the muffins green!) So without further adieu…

Hulk Smash Muffins

2 Cups flour (basically any kind you would like.. I use King Arthur White Whole Wheat)
2/3 Cup Sugar (brown or white)
2 1/2 tsp Baking powder
1/2 tsp salt
1/4 tsp Nutmeg (or more if you like spiced muffins… I usually add some cinnamon too)
1 Lrg Egg
1 Cup plus 2 Tbsp Milk (Any kind)
6 Tbsp Unsalted butter (or any type of oil)
1 tsp Vanilla extract
2 tsp Spirulina

Pre-heat oven to 375 degrees.
Measure flour, sugar, baking powder, salt, and nutmeg into a large bowl and combine.
In a medium bowl, whisk the egg until its frothy. Blend in the milk, melted butter (or oil), and vanilla.
Make a well in the dry ingredients and pour in the liquid mixture. Using a wooden spoon mix just until evenly blended, then spoon into muffin cups, filling each about 2/3 full.
Bake muffins on center rack for 15 mins. Then rotate the pan and bake for an additional 5 to 7 mins. Remove from oven and take muffins out of the pan to cool.

If you would like a sweeter taste you can melt some butter, dip the tops of the muffins in and then dip them in a 1/2 cinnamon 1/2 Sugar mixture. (will add some extra calories though!)

For added health benefits you can add a couple Tbsps of Flaxseed meal. You can also add 1/2 Cup Wheat Germ in replace of 1/2 cup of the flour. You could also add dried fruits or nuts if you would like. And maybe even add protein powder… I haven’t tried that one though, so I have no idea how it would turn out.
