Super Yummy Pasta Salad

Last night I made a pasta salad that was (in my opinion) TO DIE FOR! I took a couple recipes from different sites and kind of combined them to make up my own. Its super easy to make too! So if you like pasta salad (or even if you don’t)… give this one a try!

1 box Brown rice pasta spirals (I used Delallo)
1 Broccoli crown (cut up as small as you can get it)
3 stalks green onions (cut up)
1 can Black Olives (halved)
1-2 Cups cherry tomatoes (halved)
3-4 slices of provolone cheese (cut into 1/2 inch squares)

1/4 C Red Wine Vinegar
1/2 C Olive Oil
1 tsp Honey
1 tsp Salt
1 Tbsp Basil
1 Tbsp Parsley
Pepper to taste

Cook pasta according to directions on the box. Drain and place in a large to medium sized bowl. Mix in all the veggies and cheese. In a separate bowl mix ingredients for dressing with a whisk. Pour dressing over pasta and veggies, stir until completely mixed in. Refrigerate for at least 20-30 mins to chill and Enjoy!

Super easy… super delicious and nutritious! 🙂 (You could even add 1-2 Tbsps of ground flaxseeds for extra health value!)
