Quinoa Mac N’ Cheese… YUM!

This week I tried a delicious healthier recipe, that I knew my kids would most likely enjoy… and they did! So, I kinda “made it up” adapting from another recipe and added the veggie. I did learn with quinoa noodles boiling them in milk first (without boiling them in water for a bit first) takes a Looooooong time for them to soften, you might need to play with the noodles a bit when boiling them until the reach a softer consistency too. Anyway, here you go…

Ingredients needed:
8 oz box Quinoa Pasta shells
A cup or so of Milk (I use 1%)
1-2 medium carrots
2 cups spinach finely cut-up
1 Tbsp dry mustard
1 Tbsp garlic powder
1-2 tsp sea salt
A pinch of pepper
a handful of cheese (about 3/4 cup)

It’s super easy… Boil the pasta in water like regular but only for about 5 mins and then drain and return to the pot.
Put in about a cup of milk (enough milk to reach the top of noodles… If that makes sense)
Bring to a boil again, shred a the carrot(s) into the noodles and milk, continue to boil until the milk starts to thicken.
Then add 1 tbsp dry mustard, 1 tbsp Garlic powder, 1-2 tsp salt (depending on how you like the flavor.. You could also do garlic salt instead of garlic powder and salt if you like that better), a little pepper… Really you can add any spices you’d like, these are the ones I add.
After adding the spices add the spinach. Then once the milk is a slightly creamy consistency add about a handful of shredded cheese (I use a medium cheddar or Colby/Monterey jack).
Stir until cheese is fully mixed in remove from heat and enjoy!

You could play with this recipe and add/take away anything you want depending on how you like it to taste. If you’ve never used quinoa pasta… It is a little more firm than regular pasta. If you would like to use regular pasta or whole grain pasta remove the first step of boiling in water and start with boiling the noodles in milk… Just make sure you put the noodles in the pot first and then enough milk to cover the noodles completely… (you could also do half milk/ half water if you want to cut calories).     Candace – The hubby and I made this tonight and both loved it! Minor variations (per our pantry) we used almond milk and the quinoa garden pagoda shape. I used cheddar cheese on the hubby’s and nutritional on mine. Ridiculously good and definitely a keeper of a recipe. Thank you!
